Kerala Sadya Recipes in English (Traditional Feast)

1. Kerala Sambar Recipe

Ingredients

  • Toor dal – 1 cup

  • Mixed vegetables (drumstick, carrot, pumpkin) – 2 cups

  • Tamarind – lemon size

  • Sambar powder – 2 tbsp

  • Turmeric – ½ tsp

  • Salt – to taste

Tempering

  • Coconut oil – 2 tbsp

  • Mustard seeds – 1 tsp

  • Curry leaves – few

  • Dry red chili – 2

Method

  1. Cook dal until soft.

  2. Boil vegetables with turmeric + salt.

  3. Add tamarind water + sambar powder.

  4. Mix cooked dal and simmer 10 min.

  5. Add tempering on top.

2. Avial Recipe (Main Sadya Dish)

Ingredients

  • Mixed vegetables (yam, carrot, beans) – 3 cups

  • Grated coconut – 1 cup

  • Green chili – 3

  • Cumin – 1 tsp

  • Yogurt/curd – ½ cup

  • Curry leaves + coconut oil

Method

  1. Cook vegetables with salt and little water.

  2. Grind coconut + chili + cumin into paste.

  3. Add paste to vegetables.

  4. Mix in curd at the end.

  5. Finish with coconut oil + curry leaves.

3. Thoran Recipe (Vegetable Stir Fry)

Ingredients

  • Cabbage or beans – 2 cups chopped

  • Grated coconut – ½ cup

  • Mustard seeds – 1 tsp

  • Curry leaves

  • Coconut oil – 1 tbsp

Method

  1. Temper mustard + curry leaves.

  2. Add vegetable + salt, cook until soft.

  3. Add coconut, mix and cook 2 min.

4. Pulissery / Moru Curry (Yogurt Curry)

Ingredients

  • Yogurt – 2 cups

  • Coconut paste (coconut + cumin + chili)

  • Turmeric – ¼ tsp

Method

  1. Mix yogurt with turmeric.

  2. Add coconut paste and warm gently (do not boil).

  3. Temper with mustard + curry leaves + coconut oil.

5. Pachadi Recipe (Sweet & Sour Side)

Ingredients

  • Pineapple or cucumber – 1 cup

  • Yogurt – 1 cup

  • Coconut paste – ½ cup

  • Mustard + curry leaves tempering

Method

  1. Cook fruit/veg with little sugar + water.

  2. Add coconut paste.

  3. Mix in yogurt and temper.

6. Rasam Recipe

Ingredients

  • Tamarind water – 2 cups

  • Tomato – 1 chopped

  • Rasam powder – 1 tbsp

  • Garlic + curry leaves

Method

  1. Boil tamarind water + tomato + spices.

  2. Simmer 5 min.

  3. Temper with mustard, garlic, curry leaves.

7. Payasam Recipe (Dessert)

Palada Payasam Ingredients

  • Ada (rice flakes) – 1 cup

  • Milk – 1 liter

  • Sugar – ¾ cup

  • Ghee + cashews + raisins

Method

  1. Cook ada in milk until soft.

  2. Add sugar and simmer thick.

  3. Fry nuts in ghee and add.

  • Steamed rice

  • Kerala pappadam
