Appam Recipe in English (Soft Kerala Appam)

Appam is a traditional South Indian rice pancake with a soft, fluffy center and crispy edges. It tastes best with stew, egg curry, or chicken curry.

Ingredients

  • Raw rice / Idli rice – 2 cups

  • Grated coconut – 1 cup
    (or thick coconut milk – 1 cup)

  • Cooked rice – ½ cup

  • Yeast – 1 teaspoon

  • Sugar – 1 tablespoon

  • Warm water – ¼ cup

  • Salt – to taste

  • Coconut milk – ½ cup (optional)

Appam Recipe

1. Soak the Rice

  1. Wash rice well.

  2. Soak in water for 4–5 hours.

2. Grind the Batter

  1. Drain soaked rice.

  2. Grind with:

    • grated coconut

    • cooked rice

    • little water

Make a smooth, slightly thick batter.

3. Prepare Yeast Mixture

  1. Mix yeast + sugar in warm water.

  2. Rest for 10 minutes until frothy.

4. Ferment the Batter

  1. Add yeast mixture to the batter.

  2. Mix well.

  3. Cover and ferment for 8–10 hours or overnight.

The batter will rise and become airy.

5. Adjust Batter Before Cooking

  1. Add salt.

  2. Add water if needed to get dosa-batter consistency.

  3. Add coconut milk for extra softness (optional).

How to Cook Appam

  1. Heat an appam pan/kadai.

  2. Pour one ladle of batter in the center.

  3. Swirl the pan so the edges spread thin.

  4. Cover with a lid.

  5. Cook for 2–3 minutes until:

    • center is soft and fluffy

    • edges are crisp and golden
