Malabar Parotta with Beef Curry
Malabar Parotta Recipe
Ingredients
Maida (all-purpose flour) – 2 cups
Sugar – 1 tsp
Salt – 1 tsp
Egg – 1 (optional)
Milk or water – as needed
Oil – 3 tbsp (for dough + layering)
Method
Step 1: Make Dough
In a bowl, add flour, salt, sugar.
Add egg (optional).
Add milk/water slowly and knead into soft dough.
Add 1 tbsp oil and knead again.
Rest the dough for 2–3 hours.
Step 2: Roll & Layer
Divide dough into balls.
Roll each ball thin like a sheet.
Apply oil on top.
Fold into layers or roll like a spiral.
Step 3: Cook Parotta
Heat a tawa.
Cook parotta on both sides with oil until golden.
Crush gently with hands to make layers.
Kerala Beef Curry Recipe
Ingredients
Beef – 500 g
Onion (sliced) – 2
Tomato – 1
Ginger garlic paste – 2 tbsp
Green chilies – 2
Curry leaves – 10
Coconut oil – 2 tbsp
Spices
Turmeric powder – ½ tsp
Red chili powder – 2 tsp
Coriander powder – 2 tsp
Garam masala – 1 tsp
Pepper powder – 1 tsp
Salt – as needed
Optional
Coconut pieces – 2 tbsp (for authentic taste)
Method
Step 1: Cook Beef
In a pressure cooker, add beef, turmeric, salt, pepper, and 1 cup water.
Cook for 5–6 whistles until tender.
Step 2: Prepare Masala
Heat coconut oil in a pan.
Add curry leaves and onions.
Sauté until golden brown.
Add ginger garlic paste and chilies.
Add tomatoes and cook soft.
Step 3: Add Spices
Add chili powder, coriander powder, garam masala.
Mix well and cook for 2 minutes.
Step 4: Combine
Add cooked beef with gravy into the masala.
Simmer for 10 minutes until thick.
Step 5: Final Touch
Add coconut pieces (optional).
Switch off flame and rest for 10 minutes.
Serving
Serve hot Malabar Parotta with Beef Curry
Best with onion salad and lemon.
