Kerala Payasam
Kerala Payasam Recipe in English (Simple & Traditional)
Ingredients
Vermicelli (semiya) – 1 cup
Milk – 1 liter (4 cups)
Sugar – ¾ to 1 cup (adjust to taste)
Ghee – 2 tbsp
Cashews – 2 tbsp
Raisins – 1 tbsp
Cardamom powder – ½ tsp
Saffron (optional) – a few strands
Payasam
1. Roast the Vermicelli
Heat 1 tbsp ghee in a pan.
Add vermicelli and roast until light golden.
2. Boil the Milk
In another pot, boil milk.
Simmer for 5 minutes.
3. Cook Vermicelli in Milk
Add roasted vermicelli into hot milk.
Cook on low flame for 10–12 minutes until soft.
4. Add Sugar
Add sugar and mix well.
Simmer for another 5 minutes.
5. Add Cardamom Flavor
Add cardamom powder and saffron (optional).
6. Fry Nuts & Raisins
Heat 1 tbsp ghee.
Fry cashews until golden.
Fry raisins until they puff up.
Add to payasam.
Tips for Perfect Payasam
✅ Cook on low flame for creamy texture
✅ Add sugar only after vermicelli is cooked
✅ Use full cream milk for rich taste
