Kerala Payasam Recipe in English (Simple & Traditional)

Ingredients

  • Vermicelli (semiya) – 1 cup

  • Milk – 1 liter (4 cups)

  • Sugar – ¾ to 1 cup (adjust to taste)

  • Ghee – 2 tbsp

  • Cashews – 2 tbsp

  • Raisins – 1 tbsp

  • Cardamom powder – ½ tsp

  • Saffron (optional) – a few strands

 Payasam 

1. Roast the Vermicelli

  1. Heat 1 tbsp ghee in a pan.

  2. Add vermicelli and roast until light golden.

2. Boil the Milk

  1. In another pot, boil milk.

  2. Simmer for 5 minutes.

3. Cook Vermicelli in Milk

  1. Add roasted vermicelli into hot milk.

  2. Cook on low flame for 10–12 minutes until soft.

4. Add Sugar

  1. Add sugar and mix well.

  2. Simmer for another 5 minutes.

5. Add Cardamom Flavor

  • Add cardamom powder and saffron (optional).

6. Fry Nuts & Raisins

  1. Heat 1 tbsp ghee.

  2. Fry cashews until golden.

  3. Fry raisins until they puff up.

  4. Add to payasam.

Tips for Perfect Payasam

✅ Cook on low flame for creamy texture
✅ Add sugar only after vermicelli is cooked
✅ Use full cream milk for rich taste
