Kerala Sadya Recipes in English (Traditional Feast)
1. Kerala Sambar Recipe
Ingredients
Toor dal – 1 cup
Mixed vegetables (drumstick, carrot, pumpkin) – 2 cups
Tamarind – lemon size
Sambar powder – 2 tbsp
Turmeric – ½ tsp
Salt – to taste
Tempering
Coconut oil – 2 tbsp
Mustard seeds – 1 tsp
Curry leaves – few
Dry red chili – 2
Method
Cook dal until soft.
Boil vegetables with turmeric + salt.
Add tamarind water + sambar powder.
Mix cooked dal and simmer 10 min.
Add tempering on top.
2. Avial Recipe (Main Sadya Dish)
Ingredients
Mixed vegetables (yam, carrot, beans) – 3 cups
Grated coconut – 1 cup
Green chili – 3
Cumin – 1 tsp
Yogurt/curd – ½ cup
Curry leaves + coconut oil
Method
Cook vegetables with salt and little water.
Grind coconut + chili + cumin into paste.
Add paste to vegetables.
Mix in curd at the end.
Finish with coconut oil + curry leaves.
3. Thoran Recipe (Vegetable Stir Fry)
Ingredients
Cabbage or beans – 2 cups chopped
Grated coconut – ½ cup
Mustard seeds – 1 tsp
Curry leaves
Coconut oil – 1 tbsp
Method
Temper mustard + curry leaves.
Add vegetable + salt, cook until soft.
Add coconut, mix and cook 2 min.
4. Pulissery / Moru Curry (Yogurt Curry)
Ingredients
Yogurt – 2 cups
Coconut paste (coconut + cumin + chili)
Turmeric – ¼ tsp
Method
Mix yogurt with turmeric.
Add coconut paste and warm gently (do not boil).
Temper with mustard + curry leaves + coconut oil.
5. Pachadi Recipe (Sweet & Sour Side)
Ingredients
Pineapple or cucumber – 1 cup
Yogurt – 1 cup
Coconut paste – ½ cup
Mustard + curry leaves tempering
Method
Cook fruit/veg with little sugar + water.
Add coconut paste.
Mix in yogurt and temper.
6. Rasam Recipe
Ingredients
Tamarind water – 2 cups
Tomato – 1 chopped
Rasam powder – 1 tbsp
Garlic + curry leaves
Method
Boil tamarind water + tomato + spices.
Simmer 5 min.
Temper with mustard, garlic, curry leaves.
7. Payasam Recipe (Dessert)
Palada Payasam Ingredients
Ada (rice flakes) – 1 cup
Milk – 1 liter
Sugar – ¾ cup
Ghee + cashews + raisins
Method
Cook ada in milk until soft.
Add sugar and simmer thick.
Fry nuts in ghee and add.
